A QUICK WORD BEFORE YOU BREW: THIS IS NOT INSTANT
One thing to know up front, because it matters. This is not instant hot chocolate. Since we make our chocolate with no emulsifiers at all, you cannot simply melt the chunks into hot water or milk and give them a stir. You need to whisk, froth or blend them properly into the liquid, for around 15 to 30 seconds, until smooth and glossy. It is easy enough, you just need the right tool rather than a spoon, and those few moments are well worth it.
In short: heat your liquid, add the chunks in small pieces, then whisk or froth thoroughly with a milk frother or hot chocolate machine until smooth and glossy. Around 20g to 30g of chunks makes one lovely cup.

For some it means 100% pure, unsweetened paste. For others it is about provenance and intention: cacao sourced from a particular community or lineage, grown and prepared with a specific reverence. We have deep respect for all of that, and we make no claim to the title. What we can say is that on the things that shape quality, our cacao stands tall: rare fine-flavour Peruvian Criollo, grown organically under the Amazon canopy using agroforestry, ethically and traceably sourced from a farmers' cooperative we know and pay fairly, kept raw below 42°C, stone-ground slowly and never dutched. For the Maya and Aztec, cacao was food of the gods, shared at births, weddings and farewells, offered with prayer and treated as genuinely sacred. HOW TO MAKE A CACAO DRINK FROM OUR CHUNKS
The method is simple, and one step matters more than the rest. Heat half a cup of water per person until hot but not quite boiling, and pour it over 20g to 30g of chunks added in small pieces (about three-quarters of a small bar). Then whisk or froth it thoroughly for 15 to 30 seconds, because our chocolate has no emulsifier of any kind, a spoon simply will not do it. Add half a cup of your milk of choice (oat is our founder's favourite), warm gently while you keep frothing, and you have a smooth, glossy cup.
A quick word on kit, since the whisking is so important. A dedicated hot chocolate maker like a Velvetiser or Salter Chocolatier is the most convenient, but a simple handheld milk frother (around £10) is perhaps the most effective of all, and in our experience gives a richer, foamier cup. How much cacao should I use per cup?

Is a raw cacao drink good for you?
