WHY PERU, AND WHY CRIOLLO
Peru is one of cacao's ancient homelands, and one of the most biodiverse cacao countries on earth. It is home to around 60% of the world's cacao varieties, which is part of why its fine-flavour beans are so prized. While most of the world's chocolate is made from hardy, high-yield Forastero grown for sheer volume, we build everything around Criollo, the rare variety some call the prince of cacaos. It is fussy, low-yielding and slow to grow, but the reward is a bean with delicate notes of fruit, nuts and soft florals, and far less of the harsh bitterness that bulk cacao is known for.
ETHICALLY SOURCED FROM THE PERUVIAN AMAZON
Our Criollo beans are ethically sourced from a cooperative of farmers in the Peruvian Amazon Rainforest, where they are grown using sustainable agroforestry techniques that protect a delicate ecosystem rather than clearing it. It is a slower, kinder way to farm cacao, and it is the reason our chocolate tastes so unmistakably of where it comes from. We make sure the farmers we work with are paid fair prices for their exceptional produce, so every bar supports both the land and the livelihoods behind it.
A WHOLE LARDER OF PERUVIAN INGREDIENTS
The cacao is just the beginning. We weave in other unique Peruvian ingredients to deepen both the flavour and the nutrition of our bars. Yacon syrup, drawn from the Peruvian yacon plant, is a low-GI sweetener that adds a subtle caramel note without ever overwhelming the cacao's natural depth. Lucuma fruit, another Peruvian superfood, lends a delicate creaminess while quietly bringing antioxidants and fibre along too. And our Amarillo Chilli bar showcases the vibrant Peruvian Amarillo chilli, whose balanced heat and bright citrus play beautifully against the earthy cacao, drawing out hints of dark cherry, raisin and raspberry.
KEPT RAW, SO PERU COMES THROUGH
Because all our cacao comes from one origin, our chocolate has a clear, consistent character rather than the muddled taste of blended, mass-market beans. We protect that character by keeping the cacao raw, below 42°C, and stone-grinding it slowly over 60 to 80 hours rather than roasting it, which holds onto both the flavour and the natural goodness. The result is a chocolate bar that is a true taste of Peru: a delicious, ethical indulgence for chocolate lovers the world over. Every bar is vegan, dairy-free, palm-oil free and free from the top 14 allergens.

What makes Peruvian chocolate special?
Peru is one of cacao's ancient homelands and one of the most biodiverse cacao countries in the world, home to a huge share of its varieties. Peruvian Criollo in particular is prized for its complex, fruity and floral flavour, a world away from the flat, bitter taste of the bulk cacao used in most chocolate.
What variety of cacao do you use?
We use single-origin Peruvian Criollo, the rare fine-flavour variety some call the prince of cacaos. It is harder to grow and lower-yielding than common varieties, but it gives a far more complex flavour and a higher polyphenol content too.
Is your Peruvian cacao ethically and sustainably sourced?
Yes. Our cacao is grown by a farmers' cooperative in the Peruvian Amazon using agroforestry, so no trees are cut down to grow it. We pay fairly and the method protects both biodiversity and the farmers' livelihoods.
Which other Peruvian ingredients are in your bars?
Alongside the Criollo cacao, we use Peruvian yacon syrup as a low-GI sweetener, lucuma fruit for a creamy texture, and Peruvian Amarillo chilli in our Amarillo Chilli bar. Almost every ingredient in the range comes from Peru.
Is your Peruvian chocolate vegan and allergen free?
Yes, every bar is vegan, dairy-free, palm-oil free and free from the top 14 allergens, made in a strict nut-free facility. We sweeten naturally with low-GI yacon syrup or coconut blossom sugar, never refined sugar.
