How we make dairy-free milk chocolate taste creamy

Instead of milk powder, we make a mylk from gluten-free oat flour and rice flour, with lucuma fruit powder for a light sweetness and plenty of cacao butter for the melt. Blended with stone-ground unroasted cacao, it makes a smooth, creamy bar with no dairy anywhere in the recipe.

"The first mylk I was properly happy with was shelled hemp seeds and rice flour. I loved its earthy flavour, and so did a few friends, but most people found it too different from the dairy-free bars they knew. So I went back to the drawing board and paired gluten-free oat flour with rice flour, which took over 50 attempts: some batches tasted like porridge, some were too rich and some were too bland to call creamy."

We stone-grind unroasted cacao nibs below 42°C for 60-80 hours, so the creaminess sits on top of the cacao instead of covering it up, the way it should in good craft chocolate.

We sweeten every mylk bar with coconut blossom sugar for three reasons: it has a lower GI than refined sugar, its warm caramel taste suits a creamy bar, and research has found it holds more minerals than cane or beet sugar, though only in small amounts. What's not in our dairy-free chocolate

Our mylk bars are milk-free and dairy-free, with no gluten-containing ingredients, no nuts, no soya and no palm oil. Every ingredient comes from suppliers who don't handle nuts, and we make every bar in our own dedicated vegan, dairy-free and nut-free facility, which we keep free of the top 14 allergens under stringent HACCP controls.

No tree nuts or peanuts ever come on site. The allergen question in the FAQs below sets out what we can and can't promise.

The packaging leaves things out too: it has been plastic-free since we started in 2007, right down to the parcel tape, with certified home-compostable inner wrapping and an outer box of recyclable FSC card printed with vegetable inks.

Is your dairy-free chocolate vegan?

Yes. Every Mr Popple's Chocolate bar is vegan, made only from plant ingredients in our dedicated vegan, dairy-free and nut-free facility. The mylk bars get their creaminess from gluten-free oat and rice flours, lucuma and cacao butter rather than milk.

Is dairy-free chocolate the same as lactose-free chocolate?

Lactose is the natural sugar in milk. Mr Popple's Chocolate mylk bars contain no milk or other dairy ingredients, so there's no milk lactose in the recipe. If you have a lactose intolerance or a milk allergy, check the ingredient list, and ask your GP if you're unsure.

Is it free from nuts and other allergens?

It's free from the top 14 allergens and made in our dedicated vegan, dairy-free and nut-free facility under stringent HACCP controls, with ingredients from suppliers who don't handle nuts. Is it gluten-free?

Yes. The mylk in Mr Popple's Chocolate bars is made with certified gluten-free oat flour and rice flour, and no ingredient contains gluten. Our unit is kept free of gluten and the rest of the top 14 allergens, though as a small maker we don't run end-product gluten tests.

What sweetens your dairy-free chocolate?

Coconut blossom sugar. Mr Popple's Chocolate mylk bars contain no refined sugar, stevia or sugar alcohols. Coconut blossom sugar has a lower GI than refined sugar and a warm, caramel-like taste, and each bar's full nutrition panel is on its product page.

How much is UK delivery?

Mr Popple's Chocolate offers free UK delivery on orders over £25, so a ten-bar collection gets there on its own. Our boxes are letterbox-friendly, and the packaging is plastic-free right down to the parcel tape.
