Our original bar, and still our favourite

Signature Seventy is where Mr Popple’s started, and it’s still the bar we hand people when they ask “where do I begin?” At 70% it’s rich and properly dark, but smooth and creamy rather than sharp, an easy, everyday dark chocolate that happens to be made with real care. If you find most 70% bars a bit austere, this one will change your mind.

Made from raw, unroasted Peruvian Criollo cacao

Like all our bars, this starts with raw Criollo cacao, the rare, fine-flavour bean often called the prince of cacaos, with its natural notes of red fruit and a gentle nuttiness. We never roast it. Keeping it below 42°C and stone-grinding it slowly preserves both the delicate flavour and the natural compounds high heat flattens. When the Oxford Brookes Centre for Nutrition and Health tested five UK dark chocolate brands, ours came out top for polyphenols and antioxidant capacity. We didn’t add anything special to win that, we simply didn’t roast the good bits out.

Sweetened with yacon, smoothed with lucuma

There’s no cane or refined sugar in this bar. We sweeten it with a little organic yacon syrup, tapped from the root of the Peruvian yacon plant, with a glycaemic index of around 1 against roughly 68 for ordinary cane sugar, plus prebiotic fibre that feeds your gut bacteria. Then we add a touch of lucuma, a creamy Peruvian fruit with notes of caramel and maple, which gives the bar its soft, rounded character. Two Peruvian ingredients doing the work refined sugar usually does, only better.

A treat that gives a little back

Because it’s built on raw cacao, every square brings fibre, magnesium and iron along with the flavour, plus a gentle, long-lasting lift from theobromine, cacao’s mild relative of caffeine. It’s the kind of everyday bar that satisfies properly without the sugar slump. Like all our chocolate, it’s vegan, organic, ethically traded and made in a nut-free facility.

As a small-batch maker we don’t carry out end-product testing, so we stop short of a 100% legal guarantee, but nuts are never present anywhere in this product’s supply chain or our facility. What does it taste like? Rich, smooth 70% dark chocolate with the red-fruit and gentle nutty notes of Criollo cacao, rounded out by the soft, caramel-like creaminess of lucuma. Dark, but easy-going rather than sharp.

Is it a good bar to start with? Yes, it’s our most approachable dark bar and the one we recommend to newcomers. If 70% sounds daunting, the lucuma and yacon make this an unusually friendly way in.

Is it sugar-free? There’s no cane or refined sugar at all. It’s sweetened with yacon syrup, which has a glycaemic index of around 1 (cane sugar is about 68), so it won’t spike your blood sugar the way ordinary chocolate does. It does contain naturally occurring sugars from the yacon and lucuma (9.5g per 100g), so it’s best described as low-GI and free from refined sugar rather than sugar-free.

What is lucuma? A creamy Peruvian fruit, sometimes called the “gold of the Incas,” with notes of caramel, maple and sweet potato. We use a little (3.5%) to give the bar its smooth, rounded character and a touch of natural sweetness.

Is it vegan, gluten-free and dairy-free? Yes to all three. It’s entirely plant-based, with no gluten ingredients and no dairy.

Is it nut-free? It’s made in a strictly nut-free facility, and every ingredient comes from suppliers who don’t handle or sell nuts. As a small-batch maker we don’t carry out end-product testing, so we stop short of an absolute legal guarantee, but nuts are never present in this product or our facility. Is the cacao ethically sourced? Yes. It’s grown by a cooperative in the Peruvian Amazon using sustainable agroforestry, fairly traded, and wrapped in plastic-free, fully compostable packaging.

What sizes does it come in? It’s available as a 35g or 75g bar.

How should I store it, and how long does it keep? Keep it somewhere cool and dry, out of direct sunlight. It stays at its best for around 12 months. Because we sweeten with yacon rather than sugar, the bar is a little softer and more truffle-like than a standard hard snap, that’s normal, and part of its character.

What’s the packaging made of? Plastic-free and home-compostable: a Natureflex inner film made from wood pulp, and an FSC-certified card outer printed with vegetable inks.
