The Recipe: Cookie Dough Baked Oat Mug Cake

Ingredients (makes 1 large mug cake):

  • 1 ripe banana (70g)
  • 1 organic egg or flax egg
  • 60g drained & rinsed chickpeas
  • 2 large or 4 small dates (40g)
  • 40g rolled oats
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon & ginger
  • 1 tsp baking powder
  • 10g Mr Popple’s dark chocolate chunks (we suggest using our Signature Seventy 70% Chocolate Bar)

Method:

  1. Put all ingredients except the chocolate chunks into a high-speed blender and blend until smooth and thick.
  2. Stir the dark chocolate chunks through your batter.
  3. Pour the cookie dough mixture into a large mug.
  4. Microwave on high for about 4 minutes, checking after 2 minutes (cooking time may vary based on your microwave’s power).
  5. To serve, top with dollops of coconut yoghurt, a drizzle of nut butter, a sprinkle of cinnamon, and a handful of fresh berries.
